Vegan Celeriac Snack

 

Preparation method

  • Prepare the batter
  • Dip the celeriac in the batter and then fry for 3 minutes
  • Garnish the dish with all the remaining ingredients

 
Ingredients

  • Celeriac slices sous-vide cooked 1 pc
  • Sweet potato purée  50 gr
  • Olive oil 5 ml
  • Cherry tomatoes 25 gr
  • Brussels sprouts 50 gr
  • Golden Crispy Batter Mix 100 gr
  • Water 120 ml

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
