Tuna burger

 

Ingredients for 10 burgers
Tuna 1000g
Batter flour or Batter mix  500g
Water 500g
Chipotle mayonaise 300ml
Burger buns 10
Little gem lettuce 2
Pickled beet root 200g
 
Preparation Method

  • Mix batter with water
  • Coat the tuna with batter rand gently put in fryer 
  • Fry the tuna in oil of 180 degress in 2-3 minutes

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
