Spring salad with green peas and white asparagus

Preparation method
Blanch the peas and put 200 grams in a blender, mix the rest later for more structure
Mix the peas with a little of the cooking liquid and Parmesan cheese and finally add the batter mix
Add some olive oil to the salad leaves and garnish the salad with the other ingredients

Ingredients

  • Green peas frozen 250gr
  • Batter mix golden crisp 150gr
  • Parmesan cheese 75gr
  • Little gem lettuce  2
  • Serano Ham 200gr
  • Boiled white asparagus 8
  • Truffle mayonnaise 2

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
