Sandwich Stockholm

 

Ingredients
Hake 4 pieces
Crab meat 1 tin
Mayo 100g
Capers 15g
Batter flour or mix  100g
Water 100g
Edam cheese 50g
Iceberg lettuce  20g  
Bread
 
Preparation Method

  • Make the batter with water – ratio 1:1 and add the cheese
  • Dip the hake fish into the batter
  • Fry the fish in oil of 180-185 degrees for 4 minutes
  • Mix the crab meat with the capers and mayo
  • Cut the bread and add a bed of lettuce and add the fried fish
  • Add a spoonful of the mayo mix and serve with a slice of lemon on the side.

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
