Mackerel bite with goat's cheese & parsley

 

Approx. 20-25 bite size snacks
 
Method:

  • Ensure you have a deboned mackerel
  • Mix the mackerel with the batter and add water, goat's cheese and parsley.
  • Form the mass into bitesize snack balls, if the consistency is still too wet then add a bit more batter and fry for 3 minutes
  • Serve with remoulade sauce.
  •  

Ingredients:

  • Beer batter Grams 200
  • Water Ml 125
  • Smoked mackerel fillet Pieces 4
  • Parsley finely chopped Grams 30
  • Goats cheese Grams 125
  • Remoulade sauce Grams 10

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
