Loaded Japanese Fries with Asian batter

 

Ingredients

Smedes Asias batter gram 250
Water Ml 250
Hake filet  gram 100
Wasabi mayo gram 50
Wakame gram 20
Furikake gram 10 
Fries gram 175
 

Preparation Method

  • Prepare your batter. Dip fish in batter and fry for 4 minutes. 
  • Fry your fries and put in bowl. 
  • Place the wakame on the fries and place the fish on top.  
  • Garnish with wasabi mayo and furikake.

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
