Homestyle crispy chicken burger

 

Makes: 10 burgers
 
Method:

  • Prepare your batter
  • Fry the chicken thighs for 6 minutes
  • Cut the burger buns open and then fry the fries for 4 minutes 
  • Dress the burger buns with lettuce and onion. Add the chicken on top and dress with truffle mayo.

 
Ingredients:

  • Chicken batter Grams 300
  • Water Ml 325 
  • Chicken thighs Pieces 10
  • Burger buns Pieces 10
  • Truffle mayo Grams 250
  • Red onion rings Grams 100
  • Mixed lettuce Grams 250
  • Fries Grams 750

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
