Fried Rice with Mango & Coconut

 

Serves 4

Preparation method

  • Cook the dessert rice in coconut milk and let it cool down
  • Mix the rice with sugar to sweeten it
  • Mix the rice with the batter mix and shape into balls and fry for 3 minutes at 180°C
  • Garnish the dish with the Mango Chutney and mint

 
Ingredients

  • Dessert rice  200gr
  • Coconut milk 500ml
  • Mango Chutney with chili pepper 200gr
  • Asian Batter Mix 150gr
  • Some fresh Mint

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
