Fish & Chips

 

Ingredients, serving 5:
- 900g cod or another fish of choice (180g per person) 
- Smedes Batter
- Chips

Method:

  • Cut the fish in pieces of approx. 180 grams and prepare the batter according to the adjacent instructions. 
  • Coat the fish with the batter and ensure there is not too much excess batter. 
  • Carefully drop the fish in the hot oil (180-185°C). Fry the fish golden brown on both sides.
  • Fry the chips according to the instructions on the packaging.

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
