Crispy Parsnip and winter stew

Preparation method

  • Peel the parsnip completely so that you get nice thin strings
  • Mix the batter mix with water and stir until smooth
  • Dip the strings of parsnips into the batter mix and fry for 3 minutes
  • Use this delicious crispy bite for your winter dish: stew and mashed potato

Ingredients                                              

  • Scallops 3
  • Beer batter  200ml                    
  • Shitake 240gr
  • Mashed potato  150gr
  • Beef stewing meat 320gr
  • Some small carrots

                                    

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
