Chicken sandwich with wakame and sesame dressing

Preparation method

  • Cut the chicken thigh in half
  • Add the batter mix to the water and stir
  • Bake the flatbread at 160C for 2 minutes
  • Dip the chicken thigh in the batter and fry for 4 minutes
  • Garnish the flat breads with wakame, avocado, saltwort and radish
  • Cut the fried chicken into 4 pieces and place on the flatbreads
  • Divide the sesame dressing over each of the bread pieces

  • Chicken thigh Pieces 4
  • Wakame 80gr
  • Flat bread 4
  • Batter Mix Golden Crispy 240gr
  • Water 120gr                                     
  • Avocado 160gr
  • Saltwort 80gr                                       
  • Sesame dressing 100ml
  • Radish 50gr

Professional batter
  • Weight the batter mix and measure the water, ratio 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
