Spring salad with green peas and white asparagus

Preparation method

  • Blanch the peas and put 200 grams in a blender, mix the rest later for more structure
  • Mix the peas with a little of the cooking liquid and Parmesan cheese and finally add the batter mix
  • Add some olive oil to the salad leaves and garnish the salad with the other ingredients

Ingredients

  • Green peas frozen 250gr
  • Batter mix golden crisp 150gr
  • Parmesan cheese 75gr
  • Little gem lettuce  2
  • Serano Ham 200gr
  • Boiled white asparagus 8
  • Truffle mayonnaise 2

Professional Batter
  • Weight the batter mix and measure the water, 500gr : 600ml
  • Use a whisk and mix gently
  • The batter should glide from the whisk, not drip
