How to make professional batter


  • Ratio batter mix : water = 500gr : 600ml
    Measure (equal) parts Smedes Golden Crispy batter mix and water before mixing.

  • Pour the water into a mixing bowl and - while stirring with a large whisk - add the batter mix. This way of working will prevent lumps forming at the bottom of the tub - keep stirring until all batter mix is absorbed and ensure that there are no lumps in the batter mixture.

  • The batter should slide smoothly off the whisk when you remove it from the mixing bowl. It should not drip! If it does drip, then the batter is too thin – this must be resolved by adding more batter mix.

For perfectly battered fish, ensure the fish is fully defrosted and well drained before battering.
